Between its invisible layer of tangy lemon filling sitting on top of a buttery homemade crust and the soft, fluffy layer of meringue on top, this invisible lemon meringue pie is definitely a showstopper of a dessert!

*Ingredients:*

_For the invisible pie:_

- ¼ cup unflavored gelatin powder + ⅔ cup water
- 3⅓ cups water
- juice of 4 lemons
- ½ cup sugar

_For the meringue:_

- 3 egg whites
- pinch of salt
- ½ cup sugar
- ½ cup powdered sugar
- 1 tsp corn starch (optional)

_Extra:_

- pie dish
- baking beans
- cheesecloth or fine strainer
- culinary torch
