Middle Eastern spices and Central Mexican street fare combine in our version of this flavorful taco. The recipe begins with the bold choice of rich, beef chuck roast. A charcoal kettle grill and 10 to12 inch skewers mimic the vertical rotisserie of traditional al pastor. It's a new spin on tradition -- try Tacos al Pastor in this unique outdoor grilling recipe: 

INGREDIENTS:
2 1/2 pounds Certified Angus Beef ® chuck roast
6 dried guajillo peppers
3/4 cup pineapple juice
1/2 cup orange juice
1/4 cup cider vinegar
6 cloves garlic
2 tablespoons achiote powder (also known as annatto)
1 tablespoon coarse kosher salt
2 teaspoons black pepper
2 teaspoons cinnamon
2 teaspoons cumin
2 teaspoons dried oregano
1 whole ripe pineapple
2 cups pico de gallo
16 small corn tortillas
2 cups fresh cilantro leaves, stems removed
